Fearless in the Kitchen Course
How do you achieve that feeling of being Fearless in the kitchen and what does it actually mean? After surviving Cancer and Sepsis my partner needs to consider carefully what he eats, but as a typical man, he doesn’t. It’s a constant battle to keep him on the straight and narrow, so when I met Jen Roach at a recent 10-12 Business Club I was intrigued to find out more about her Fearless in the Kitchen Course concept of supplementing sugars, dairy, and wheat.
Fearful in the Kitchen
Like most men my partner was fearful of creating a full meal in the kitchen and would often refer to his trusty Delia Smith cook book when in doubt. It is well thumbed and full of wholesome meals with lovely sauces but nothing that was uber healthy such those prepared by Jen from Fearless in the kitchen.
So I took the plunge and booked us both on to her half day course and told him the good news! Much to my surprise he was keen to find out more and learn some new healthy dishes. Eating the right things is not a problem, its just knowing how to cook them and how to present food in a different more healthy way.
A day in the Kitchen
It’s not often that we have a day in the kitchen so when our day arrived we were both intrigued and a little excited as to what was in store. I would say now if you are wondering will you like it, I would say just book it and try.
On arrival we were warmly greeted by Jen and her husband and quickly made to feel welcome in their lovely home. A cosy kitchen is the setting for the “lessons” as well as a mandatory walk around the garden, checking out all the planting Jen has been busy doing. It is a lovely part of the day walking through herb gardens and vegetable plots. Jen is a hive of information on growing ANYTHING in the garden
After our walk we are treated to a healthy option breakfast, one of our recipes and a quick easy alternative to cereal. And so our day starts, we learn how to use ingredients such as Chia Seeds, White Miso and Mirin to make very different dishes, simple and easy to do and very tasty. Our favourite of the day is learning to cut Broccoli differently, coat with a Miso and ginger sauce then bake in the oven! A vegetable dish that has since been wonderful with fish, chicken and bacon.
The best thing with your day in the kitchen is that you get to take everything home with you that you have cooked. Not only did we get fed breakfast and lunch, we also took home dinner for the whole weekend! What we made
On our day in the Fearless Kitchen we made the following dishes and were able to take them home with us at the end of the day:
- Apple Cinnamon Caramel Breakfast
- Mediterranean chicken tray bake with preserved lemons
- Fermented Lemons
- Basil Pesto
- Roasted Carrot, Dates, Orange & Soba Noodles
- Roasted Broccoli & Cauliflower with Miso Ginger
- Roasted Chickpeas
- Sunflower Dip for the Crackers
